Parchment Paper Sea Bass

A simple, easy, delicious fish in under 30 minutes!

Ingredients

For the Fish

  • 2 black sea bass filets

  • 1/4 pound green beans

  • 1/2 cup kalamata olives

  • 2 vines of cherry tomatoes

  • 4 tablespoons of capers

  • 1 shallot

  • 1 lemon

  • 2 sprigs of thyme

  • olive oil

  • salt & pepper

For the Side

  • A simple salad with my lemon anchovy vinaigrette

For the Beverage

  • I have this as a quick weeknight meal and enjoy with a seltzer and citrus!

How I made it- Seasoned the filets with salt and pepper then placed the lemon slices down first followed by the fish. I added green beans, tomatoes, thinly sliced shallots, kalamata olives, capers, olive oil and a sprig of thyme. Wrapped up and roasted on 425 for 15 minutes.

While the fish was roasting I made my lemon anchovy vinaigrette for a side salad.
