Whole roasted snapper tacos

A whole roasted fish with all the toppings to make the perfect shareable tacos, paired with an extra spicy margarita

Ingredients

For the Fish

  • 2 cloves garlic

  • 1/2 cup parsley

  • 1/2 cup cilantro

  • 1/4 cup avocado oil

  • pinch of cumin

  • pinch of salt

For the toppings

  • cilantro

  • mint

  • thinly sliced radishes

  • red onion

  • charred scallions

  • salsa verde

  • limes for squeezing

For the Beverage

  • Spicy mandarin margaritas for 2

    • 4 oz tequila

    • 1 oz orange liqueur

    • 2 oz lime juice

    • 3 oz mandarin juice

    • 1 oz agave or simply syrup

    • 1 serrano pepper chopped

How I made it- Preheated oven to 400 then made the parsley cilantro sauce with..

2 cloves of garlic
1/2 cup parsley
1/2 cup cilantro
1/4 cup avocado oil
Pinch of cumin

Puréed and seasoned with salt. Patted the fish dry and seasoned with salt and pepper then generously spread the sauce inside the fish then into the oven for about 15 minutes.

Served with thinly sliced radishes, red onion, charred scallions, mint, cilantro, limes, salsa verde and warm tortillas!
